4 pounds of chicken wings, cut into wingettes and drumettes with tips removed
2 tablespoons baking powder (not baking soda)
3/4 teaspoons salt
Oil spray
Directions
- Use a paper towel to pat the wings and drums dry
- Preheat oven to 250 degrees
- Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil
- Place wings in a ziplock bag. Add the baking powder and the salt, then seal the bag, and toss to coat evenly.
- Place the wings on the baking tray in a single layer with the skin side up. They should fit just snugly.
- Place wings on the lower middle oven rack and bake for 30 minutes.
- Move wings to the upper middle oven rack and increase the oven temperature to 425 degrees. Bake for another 25-35 minutes, rotating the tray halfway through. Cook until the chicken reaches an intermal temperature of 165 degrees.
- Toss wings in sauce of choice, such as Prospectors Pick, Gold Rush, or Powder Keg BBQ & Grilling Sauce. Sauces may also be drizzled or served on the side for dipping.
