Ingredients

  • 2 oz Chicken, cooked and chopped

  • 2 Tablespoons Prospectors Pick BBQ Sauce

  • 1/2 cup Cheddar/Jack Cheese Blend

  • 1 tablespoon Red Onion, diced

  • 1 tablespoon Cilantro, chopped

  • 2 Flour Tortillas, 8 inch

  • Salt and pepper to taste

Directions

  • Pre-heat griddle or large skillet over medium to medium-high heat.
  • Mix the cooked chicken and BBQ sauce together and set aside.
  • Lay one tortilla flat on work surface, spray with non-stick cooking spray, then sprinkle with salt and pepper. Turn the tortilla over and spread cheese evenly onto the tortilla. Spread the chicken mixture over the cheese then top with the onion and cilantro. Place the second tortilla on top, spray with non-stick cooking spray, then sprinkle with salt and pepper.
  • Place the quesadilla onto the griddle or into the skillet and cook for 3-5 minutes or until toasted. Flip the quesadilla and cook for 3-5 minutes more.
  • Remove the quesadilla from heat and allow to cool, then slice with knife or pizza cutter.
  • Serve with your favorite toppings. Suggestions include sour cream, guacamole, salsa, lettuce, and diced tomatoes.
